Joie de Vivre: Victoria Sandwich Cake
Inspired by simple pleasures and the exuberant enjoyment of life, what the French refer to as “ joie de vivre”.
I'm a big fan of The Great British Baking Show. It makes me feel all warm and fuzzy inside. The baker's dozen are always so sweet and supportive of each other, the bakes are ambitious and inspiring, often of interesting and historical origin, and then there is the Great Mary Berry, who I want to be when I grow up. The Classic Victoria Sandwich has been on my list of bakes to try for a few years and I finally gave it a go for Mother's Day this year. (My mom is a serious Anglophile and I knew she'd appreciate the classic British dessert). Not to brag, but it came out absolutely delicious! Light layers of fluffy sponge filled with cream and strawberry jam. As Prue Leith would say, "worth the calories".
